The nose begins with a very French gun flint aroma (seen in Chablis or sometimes German Reisling) that makes way for honeyed green fruit, white melon, and sourdough.  On the palate, the entry is almost hoppy with notes of beeswax, jackfruit, and dried orange peel.  While there is a layered effect of tannin that offers a nice grip and texture, there is no bitterness or harshness to the tannins that can be seen in some orange wines.The finish lingers with notes of lemon zest and grapefruit rind.

Most rosés are made from saignée or bleed, meaning the focus was red wine and the fruit was picked later to allow for tannin development. This Syrah was picked only for rosé and went directly to the press, meaning Brix was lower and acid was higher, creating more fresh flavors than baked flavors. Also because of the skin contact in the press, nitrogen and other nutrients were extracted from the skins to create a helathy fermentation. No hints of sulfides or off flavors from nutrient deficiency in fermentation. The result is a clean and fruit forward wine with complexity and texture.

Nose: Huge boquet of perfume in the form of white flower, jasmine, honeysuckle and apricot skin.

Entry: Beeswax, pear, round acidity complimented with beeswax and lanolin.  Slight minerality on the mid-palate.

Palate: Lemon zest, bergamot, and geranium give way to a green apple and Bartlett pear finish, with a lingering acidity that gives the wine structure and depth.

Nose of white flower, pineapple, and lemon meringue pie. Round entry of peach skin, jasmine, and citrus with acid that carries to the back of the palate. Finishes with honeysuckle, beeswax, and lime. Retro-nasal carries through with tropical scents and hints of wet stone. 

This white wine was made more like a red wine: barrel fermented in 20% new oak, 20% malolactic fermentation, and aged for 9 months. The low pH will allow for aging. Texture provides a serious wine for collectors.
