The reserve block, the crown jewel of our 10-acre Oak Knoll estate, yields just six barrels of wine that exemplifies the lush depth, complexity and structure that define our Reserve Cabernet Sauvignon - an opulent Napa Valley classic, which belongs in any collector’s cellar.
Situated in rocky, well-drained alluvial soil by a bend in Dry Creek, the low-yielding reserve block is planted exclusively to Bordeaux clone 337, renowned for its small berries, rich, concentrated black fruit and tremendous flavor intensity.
The tiny black clusters were meticulously hand selected and sorted before four days cold soak and a warm fermentation. Several weeks of extended maceration polished and rounded the tannins assuring a cellar-worthy wine with a supple, velvety mouthfeel. The addition of a small amount of Cabernet Franc added to complexity and elegance, further enhanced by 27 months maturation in 80% new French oak.
